The idea came about when its owner, Jay Jerrier, went to Italy in 1995. And this is where he tasted his first true Italian pizza. He knew right then and there that he wants to replicate that same special experience. So when he made his way to Dallas, he had a wood-burning oven built in his backyard. Furthermore, he made it a point to train at the Associazone Verace Pizza Napoletana to learn how to craft genuine Neapolitan style pizza. Hence in 2009, Cane Rosso began its operation as a mobile pizza. It operates in numerous locations across the Dallas Fort Worth metroplex.
The pizza place only uses ingredients of the utmost quality. What they want to offer is an authentic Italian dining experience. Additionally, their handmade dough is always fresh and never-frozen. Likewise, it is also made in-house every day. They also make sure to only use all-natural OO flour, which they import from Italy. Plus, they even produce their mozzarella in-house daily.
And to complete the entire experience, they fire all their pizzas in the special wood-fired oven from Italy. The oven cooks the Neapolitan-style pizza at 900 degrees in under 90 seconds. What’s more, this method gives it that light and delicate dough with slight charring.
